A New Season at The Well Balanced Table

Hi friends, I’m so glad you’re here!
If you’ve followed The Well Balanced Table for a while, you might remember when this space was mostly about healthy meal prep and helping busy families get dinner on the table. And while that season served its purpose, something deeper has been stirring in me — something I couldn’t ignore any longer.
This blog (and the heart behind it) is shifting. I’m stepping into a new season where The Well Balanced Table becomes more than just about what we eat — it’s about how we live, how we connect, and how we care for the body and soul God has given us.

Why the Shift?
Over the last few years, God has been gently drawing me into a deeper understanding of what “wellness” really means. It’s not just about macros and meal plans. It’s about being whole — physically, emotionally, and spiritually. It’s about nourishing our bodies without shame, loving ourselves without guilt, and living with purpose rooted in grace.
And if I’m being honest… I needed that reminder myself. I’ve walked through burnout. I’ve struggled with body image. I’ve wrestled with feeling like I had to do it all “just right.”
But God. God met me in the mess and reminded me that He’s not after perfection — He’s after my heart.

I’m So Glad You’re Here
It’s scary and beautiful to pivot. But I have done it before, and I know I’m not doing it alone. My prayer is that this blog becomes a place of peace, wisdom, and hope — like a seat at a table where you can just breathe, be real, and know you're not alone.

🌿 Farmhouse Garden Skillet
“From the earth He gave us…” – a simple, whole food meal to nourish body and soul.
Serves: 4–6
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
✨ Ingredients
1 tablespoon olive oil or avocado oil
1 medium onion, diced
2 cloves garlic, minced
2 medium red potatoes, diced small (or sweet potatoes)
1 bell pepper (any color), diced
1 zucchini, sliced or chopped
1 cup green beans (fresh or frozen), chopped
1 cup corn (fresh or frozen)
1 handful cherry tomatoes, halved
Salt & pepper to taste
Optional: smoked paprika, fresh basil, shredded cheese
🥣 Instructions
Warm the oil in a large skillet over medium heat. Add the diced onion and cook for 2–3 minutes until it starts to soften. Add garlic and stir until fragrant.
Add potatoes and sauté for 7–8 minutes, stirring occasionally. Add a splash of water and cover the skillet to help steam the potatoes slightly if needed.
Add remaining veggies (bell pepper, zucchini, green beans, corn). Season with salt, pepper, and smoked paprika if using. Cook another 7–10 minutes, stirring occasionally, until everything is tender and lightly browned.
Stir in tomatoes in the last 2 minutes of cooking just to soften.
Sprinkle with herbs or cheese, and serve hot.
📝 Notes
This is a great clean-out-the-fridge meal — feel free to swap in carrots, mushrooms, kale, or whatever is in season.
Add leftover cooked chicken or beans for protein.
Serve with a slice of homemade bread or a drizzle of hot sauce!
